How to make
Ingredients
- 1 tbsp (15 mL) PC®Splendido Extra Virgin Olive Oil - Cold Pressed
- 2 Onions, finely chopped
- 3 stalks Celery, finely chopped
- 1 bottle (1.89 L)PC®8 Vegetable Cocktail
- 1 can (540 mL) Bella Tavola White Kidney Beans, rinsed and drained
- 2 cups (500 mL) Whole Wheat Rotini
- 1/2 tsp (2 mL) Freshly ground black pepper
- 1 pkg (142 g) PC®Organics Baby Spinach
How to make
- Step 1In large saucepan, heat oil over medium-high heat; cook onion and celery for 8 minutes or until vegetables are soft. Stir in vegetable cocktail and 3 cups (750 mL) water. Bring to a boil. Stir in beans and pasta. Reduce heat to medium-high. Cook uncovered for 10 minutes or until pasta is tender.
- Step 2Remove from heat. Stir in pepper and spinach. Serve immediately.
